Roll out pie crust on a lightly floured work surface (My marble board works perfectly for this)
Open envelope and use it as a template to cut out the shape of the pastry envelope
Fill the pastry with pie filling, being careful to not overfill
Fold pastry envelope
Brush with heavy whipping cream
Decorate with sugar (If desired)
Bake at 350 degrees for 20-25 minutes in a large cast iron skillet lined with parchment paper
Let cool first, then remove to plate
