For Valentine’s Day my daughter and I decided to both make a special dessert treat for our respective sweeties…
Ingredients:
- 1 package pre-made pie crust (I used Pillsbury)
- 1 can cherry pie filling
- Red decorating sugar
- ¼ cup heavy whipping cream
- One paper envelope
- Parchment Paper
- Large, 15-Inch Cast-Iron Skillet, or Cast Iron Baking and Pizza Pan
Method:
- Roll out pie crust on a lightly floured work surface (My marble board works perfectly for this)
- Open envelope and use it as a template to cut out the shape of the pastry envelope
- Fill the pastry with pie filling, being careful to not overfill
- Fold pastry envelope
- Brush with heavy whipping cream
- Decorate with sugar (If desired)
- Bake at 350 degrees for 20-25 minutes in a large cast iron skillet lined with parchment paper
- Let cool first, then remove to plate
I couldn’t waste the leftover pie filling and pastry scraps so I made a small cherry pie in a #3 Wagner Ware Sidney -O-
