Keto Friendly Pizza

Pizza with Keto Friendly Crust

Even when a family is eating keto, sometimes they still want pizza. Most of the time, this calls for “Fathead” dough but I decided to go with a simple recipe with just 5 ingredients.Ingredients:

Pizza Crusts

    • large Eggs
    • 1/2 tsp Sea salt
    • Approximately 2 Tbsp Extra Virgin Olive Oil
  • Pizza Sauce
    • 15 oz. can Organic Tomato Sauce
    • 8 oz. can Organic Tomato Paste
    • 2 cloves garlic mashed with Sea Salt
    • Italian Seasoning to taste
    • Rosemary to taste (I grind mine fresh with a mortar and pestle but you can use whatever type you like)
  • Pizza Toppings
    • Shredded Mozzarella
    • Pepperoni
    • Italian Sausage (Browned)
    • Green Olives
    • Jalapenos

(* I now use 4 Cups of the Fine Flour and no Meal or fine flour and pork rinds *)

Almond Flour & Almond Flour/Meal

Method:

  • Pizza Crusts
    • Pre-heat oven to 425 degrees
    • Mix almond flour and almond flour/meal in a large bowl (If using 2 types)
    • Mix salt, ghee, 4 eggs and the yolk of the 5th egg together to form a ball
    • Place parchment paper into a #8 Skillet and a #10 skillet, 2 #10 Skillets , or Cast Iron Pizza Pans depending on desired crust thickness
    • Grease the parchment paper and skillet sides with your fat of choice (I use lard)
    • Spread the dough in the pans on the parchment paper and form a lip around the edge to contain the sauce
    • Dock the dough (prick with a fork) to keep it from bubbling up
    • Par-bake the crusts 18 minutes until browned (You may have to dock the dough more, it really likes to seal up and bubble more)
    • Remove the pans with the crusts
    • Brush the tops of the crusts with olive oil and top to your liking

For the pizza crust, I have been changing things up striving for perfection. I now use:

  • 5 eggs and 2 yolks instead of 4:2
  • 2 cups of almond flour
  • 2 cups (after food processor, 2 bags before…) plain or spicy pork rinds
  • Pre-heat pan to 450 degrees
  • Carefully press dough into pre-heated pan

  • Pizza Sauce
    • Mix tomato sauce, tomato paste, garlic, Italian seasoning and rosemary in a cast iron skillet
    • Simmer while the pizza crusts par-bake
  • For these pizzas
    • Pizza one
      • Pizza sauce, mozzarella cheese, green olives, pickled jalapenos
    • Pizza two
      • Pizza sauce, mozzarella cheese, Italian sausage, pepperoni
  • Turn the oven temperature up to 450 degrees
  • Bake the pizzas 10-15 minutes or until the cheese melts and just starts to brown
  • Remove from the oven and let set a few minutes, slice, and enjoy!
