
Oatmeal Cream Pies are always a crowd pleaser. This recipe will make one much better and more memorable than the plastic wrapped ones purportedly made by some little lady…
Ingredients
- Cookies
- 2 cups packed dark brown sugar
- 1 cup (2 sticks) salted butter, softened
- 2 teaspoons vanilla extract
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3 cups old-fashioned oats
- Frosting
- 1 cup Shortening
- 1 cup confectioner’s sugar
- 1 tsp vanilla
- 1 tsp almond extract
Instructions
- Beat brown sugar and butter until fluffy. Then mix in vanilla and eggs
- Mix flour, salt, baking soda, and oats, then add into the wet ingredients and mix until combined
- Divide the mixture and place into 2 greased #8 Cast Iron Skillets
(You can definitely use different sizes but you will have to adjust your cooking time)
- Place cookies in a 325-degree oven for approximately 20-25 minutes

- Cream shortening, vanilla, and almond for Add in sugar in small batches. If your mixer struggles too much you can add a small amount of milk but not very much at all because you want this to be firm enough to support the weight of a huge, dense cookie.
- Let the cookies cool for 10-12 minutes in the skillets before turning them out onto a cutting board
- Let the cookies completely cool then put the bottom one onto a plate with the larger side up. Ice the top of the cookie then place the other one onto it with the larger side down, facing the frosting.
